Cucumber "Cakes" and Daintiness
My husband makes fun of me because I think cucumber sandwiches are nice. He doesn't understand why anyone thinks they are actually "food". Well, truth be told, I would rather have a bacon cheeseburger with mushrooms and swiss. However, that grease-drippin' burger doesn't make a girl feel quite as dainty as a nice little cucumber sandwich. So there is your answer hon. Food is about taste, but also about feeling. Once in awhile, I want to feel dainty.
Simply mix 1/2 cream cheese, 1/2 Neufchatel, a sprinkle of salt and a sprinkle of dill and let it sit in the fridge overnight to blend. Give it a good stir, then layer white bread, cheese and thinly sliced cucumbers. I used a mandolin for thin slices and circle cutters in different sizes to create my cakes:

These are the cucumber "cakes" I made for a little girl's picnic recently.
Stacked high like a wedding cake, they are more a feast for the eyes than the stomach.
I lightened the traditional sandwich up by substituting half of the cream cheese for Neufchatel. Yeah, say that three times fast.

Add in some frozen grapes to garnish and get dainty!
